Jam-Filled Shortbread cookies

Ingredients

  • 250g (9oz) of salted butter, slightly melted and soft.
  • 120g (3/4 cups) of icing sugar
  • 2 egg yolks
  • 350g (12oz) of plain all purpose flour, and a little extra for dusting.
  • your favorite flavor of jelly or jam :)

Making the dough

Whisk together the butter, icing sugar, and egg yolks in a large bowl until you feel like you achieved a creamy mixture. Stir in the flour until it’s combined nicely with the mixture. After that, cover the bowl with cling film and put it in the fridge to rise for a minimum of 1 hour. 

Assembling and baking

Preheat the oven to 180°C. Line a baking tray with grease proof paper.

On a flour dusted surface, use a rolling pin to flatten the dough into your perfered thickness (best at 0.5 cm). Cut the dough to squares or circles, roll the excess back and keep making biscuits until no more dough is left. for HALF the biscuits, cut out fun shapes, this will be where we fill the jam.

Bake in the oven for 10-13 minutes, keep a close watch; do not allow the shortbread to color! after that let it cool out in the baking tray, then fill the center of a whole biscuit with jam and place one of the cut out pieces on top.

P.S. if you don’t like jam you can totally skip that and still end up with the perfect shortbread biscuits. my brother said “We should totally buy sugar icing for this next time”
