hello! how are you doing? ![]()
i've seen quite some people on this website publishing some recipes, it inspired me so i'll share one of mine with you!
for today's dinner i made "chicken" soup. but, well, i'm vegetarian and don't eat chicken, that's why i used eggs instead
ingredients needed for 4 servings:
- 1 egg (or 2 eggs, if u prefer)
- water (600ml)
- thin sliced onions (2 tbsp)
- thin sliced/grated garlic (1 tsp)
- chopped green onions - to taste
- cooked rice (aprox. 300g)
- soy sauce (1 tsp)
- thin sliced/grated ginger (1 tsp)
- vegetables stock powder/cube (follow package instructions to dissolve correctly)
- salt - to taste (optional)
- olive oil (1 tsp)
instructions:
- first, break the egg in a separate bowl or cup to beat it lightly with some salt (optional)
- in a hot, big pan, add the olive oil and let it heat up a bit. then, add the onion and sauté until wilted. finally, add the garlic and ginger and sauté quickly until it smells amazing!! carefull to not let it burn.
- add water and dissolve the vegetables stock powder/cube. let it simmer for 3 minutes over medium-low heat and then add the cooked rice and chopped green onions. after more 3 minutes, add soy sauce and mix it!
- finally, pour the beaten egg in a slow circle motion. wait 20 seconds and then stir gently.
- add your favorite toppings and enjoy!
note 1: you can skip the sautéing onion, ginger and garlic part, and start the recipe at step 2. it will make the soup less strong in smell and taste!
note 2: the ginger makes the soup feel a lot more comfier, in my opinion. perfect for cold and foggy days at home. the garlic and onion add a pinch of flavor, avoiding the soup to taste plain!
note 3: you can definitely add real meat and real chicken broth. for instance, the inspo i took (@daicook504 via TikTok) used 60g of imitation crab (for a little more protein) and chicken stock powder instead of the vegetables one.
this is a really simple recipe for cold days, and perhaps when you're feeling sick! it's so easy - it use so little ingredients, and you can even give a purpose for the rice left in the fridge, lol
so, what do you think? ![]()
