Hey there! I wanted to contribute to the FR Cookbook that Ziv started with one of my go-to recipes! I eat these for brunch almost every day, not even kidding. I am someone who has a gluten sensitivity and am pretty lazy when it comes to cooking, so this quick recipe was a game changer for me! And I guarantee that these pancakes will keep you FULL throughout the day! <3
I am American, so my apologies if my conversions look off! We unfortunately are not blessed with the metric system here! (T^T)
Ingredients (makes about 4-6 pancakes):
♡ 2 cups (180g) of oats (It does not really matter on the type of oats, but I always use old fashioned.)
♡ 1 cup (250 ml) of milk (I use soy milk, which works just fine!)
♡ 2 eggs
♡ 1 banana (preferably ripened)
♡ 1 tbsp (14g) of butter
Steps:
1. Put the oats into a blender to make an oat flour.
2. Add the oat flour, milk, eggs, and banana to a mixing bowl.
3. Mash the banana and mix everything together with a whisk until you have a thick batter.
4. Heat up a non-stick pan on a medium setting, and melt the butter to use as an oil. Make sure that the butter covers the whole surface of the pan!
5. Scoop out about 1/3 cup (80ml) of batter onto the pan for each pancake. For bigger pancakes, do this twice for each. Wait a few minutes before flipping each pancake with a spatula. If the pancakes glide super easily across the pan, they are ready to be flipped! Add more butter on the pan if needed over time.
6. Serve on a large plate and enjoy!
