What is specialty coffee?

This is a thread/forum to discuss, share and learn about specialty coffee. 

In essence, coffee is given a score at origin (the country where it's grown, harvested and processed) and if it's above 80, it's considered specialty. 

In other words, if the coffee tastes good and has very few stones, sticks and other foreign objects, it enters the esteemed category of specialty.

I know of a few international roasteries that I can recommend on request.
