I'm still learning to cook myself so sadly I cant offer technical advice, but the best things that help me when it comes to getting stressed:
1. Follow recipes TO THE LETTER. Reading through instructions both before and during helps with having confidence that I'm doing it how I'm supposed to. It's especially important to do it before so that if there's any terms or methods I don't know I can look them up to make sure I understand.
2. Having some background noise! For me it's usually another person I can talk to so that they could help if I need, but just something that's not too invasive like music (I use tavern music to pretend I'm running a fantasy tavern for shits and giggles) or a funny video can help to chill out. as long as it's not distracting enough to pull you away unsafely I'd recommend trying that if you haven't already!
One last thing I want to throw out there is this one site I use called MyFridgeFood! It lets you select ingredients that you currently have on had and uses those to find tons of recipes from just what you select. It's really helpful since I usually don't have much to work with and it gives lots of options, If figuring out what to make is part of your worries this should hopefully help!
Hope you have good luck with ur cooking!!
