I decided to make a copycat recipe of one of my Olive Garden favorites - Zuppa Toscana. It was an absurd hour because that's just how my brain works. Start cooking soup at 2 a.m.? Yes. Anyways... it was time for me to start separating the kale from the stalk, so I started to tear a few pieces off and place them in a colander to be washed. As I reached for another stalk, I notices a spotted friend peeking out at me from the lip of the colander. I was so surprised that I literally said, OH! I put my hand out for Mr. or Ms. Lady but to crawl on and immediately told my husbo to get my sandals and open the door for me. He asked if I had caught another cricket and I told him this time I was releasing a ladybug, which surprised him as well. I placed my new friend on the long leaf of one of our succulents out front. She tried to crawl back on my hand, but indoors is no place for a little ladybug.
I carefully inspected the kale and washed it thoroughly, then into the soup it went. While the soup simmered, I went ahead and sent the picture below to my daughter and told her all about what had transpired. We couldn't get over how this little ladybug was somehow hiding inside kale that had been sitting on the supermarket shelf for who knows how long and then was even able to withstand being inside my fridge for at least 5 hours! Thankfully, they stayed strong and persisted.
Maybe it's a strange thing to blog about, but I don't really care. I feel that moments like these are little gifts from the universe and I am so grateful for each and every one of them.
