Critter’s Kitchen: Banana Bread Matcha ⋅˚₊‧ ୨୧ ‧₊˚ ⋅

Welcome to the matcha creation kitchen.

I fear I may have created one of my favourite matcha additions.

Stick around if you would like the recipe with a cute lil twist.

I had a couple of ripe bananas sitting around and decided that instead of doing the responsible thing and make actual banana bread...I was going to turn them into syrup for matcha.

Banana Bread Syrup

What you'll need:

✨2 ripe bananas, sliced

1/2 cup brown sugar

If you don't have brown sugar, you can also mix white sugar with a little molasses. This is my method. Half cup white sugar and 1 tablespoon and mixxx.

1/2 cup water

1 tsp cinnamon

1 tbs vanilla

Tiny pinch of salt

Add your bananas, brown sugar, water, cinnamon and salt to a small pot over medium-low heat.

Let everything gently simmer for about 10 minute, mashing the bananas as they soften. Your kitchen will start smelling suspiciously like banana bread and this is when you know you're doing important work. Important matcha work.

Once everything is soft, syrupy, and delicious looking, remove it from the heat and let cool for about 10 minutes. Once cooled stir in your vanilla.

I blend mine until smooth because I want more of a thick, creamy banana syrup, but you could absolutely strain if you prefer something thinner.

Then pop it into a jar in the fridge.

THE IMPORTANT PART: MATCHAAA

For my latte, I added a spoonful...maybe two or three of banana bread syrup to the bottom of my glass, pour in my dairy of choice (oat is phenomenal), and topped it with matcha.

Annnd ohhhh my god.

It taste like a cozy lil banana bread had a baby with my daily matcha.

Sweet, bananany, cinnamony, and ridiculously comforting for my soul.

Honestly, one of my favourite parts of making drinks at home is turning them into tiny silly projects to share on FriendRewind.

I think tiny joys are supposed to be exactly that. The little things that would normally go unnoticed.
