Hadn't even intended to do a 'part 2' so soon, or on a related topic, but a nice person commented on my last blog that they wanted this recipe, so here we are, then.
This makes acorn bread. It's like a 'corn' bread, but far less sweet and with a mild nutty taste.
INGREDIENTS:
1 cup acorn flour (read my last blog about processing acorns)
1 cup flour (any all purpose flour should do, I reckon)
2 tsp baking powder
3/4 tsp baking soda
2 large eggs
1/2 cup honey
1/4 oil or butter
1 cup milk (buttermilk is especially good for this!)
RECIPE:
1) Preheat the oven to 375°f
2) Mix all of the dry ingredients
3) Add the rest of the ingredients and blend well until smooth
4) Pour into a 10" frying pan, or a 9"x13" baking pan. It doesn't rise much, so you can go maybe 3/4 full on that frying pan if you have enough batter.
5) Bake at 375⁰f for 25 minutes (check it with a toothpick)
The acorns will bale pretty dark, so over all it should look a golden brown, but with a more DARK brown where there was contact with the pan.
It's actually a fairly bland taste and a nice texture, but applying a goodly lathering of butter and honey wakes up the flavor a bit more.
