As you may or may not know, ya girl got a bread maker a little over 2 weeks ago and she has become one with the bread.
First things first - I made cinnamon bread and she fought back.
NOT FAIR.
So this all started because I wanted to make a cute lil cinnamon bread in my bread maker. Nothing overly dramatic. Just some flour, yeast, cinnamon, sugar and some good ol' cozy vibes.
Annnd. Apparently this loaf of bread had other plans.
The first loaf rose so gosh darn aggressively that she started lifting the lid to my little machine like she was trying to make the great escape. This loaf had a full on mushroom-top happening and I spent the rest of the bake staring at it like "uhhh...is this supposed to happen??" (˵ ͠ಥ‿ ͠ಥ˵)
Thankfully, she was cooked. I know this because I immediately started picking pieces off the top like the little bread gremlin I am.
THEN.
I cut into the loaf and discovered another betrayal with my recipe: some slices barely had any cinnamon in them. Excuse me?!? I did not go through all of this for some plain ass white bread wearing a cinnamon hat.
SO obviously, some adjustments were made.
Less dough chaos, better cinnamon distribution, and slightly less "bread machine giving birth on a Saturday next to the ice maker."
And now we have a much easier cinnamon bread that is still cozy and delicious without me having to perform bread surgery half way through the cycle.
Kaylvang's Lazy Girl Cinnamon Bread
Ingredients:
☺ 1 cup warm milk
☺ 1 large egg
☺ 2 tbsp softened butter
☺ 3 tbsp sugar
☺ 1 tsp salt
☺ 3 cups bread flour
☺ 1 tsp cinnamon
☺ 2 tsp bread machine or quick-rise yeast
For EXTRA Cinnamon Goodness:
☺ 2 tbsp brown or white sugar (use what you have)
☺ 1 tsp cinnamon
Instructions:
Add everything to the bread maker in the order recommended for your machine.
For mine, I add the liquids first, the dry ingredients, with the yeast going in last.
Add the extra cinnamon and sugar directly with the dry ingredients so the flavour gets mixed through the whole loaf instead of randomly hiding in only 4 slices.
Select your basic or white bread setting and let the maker do her lil thing!
Then ignore it.
Seriously.
Are you ignoring it?
Do not panic when she starts to spin.
Don't poke it.
Don't open the lid every five minutes like an anxious Victorian mother trying to feed her 12 starving children.
Let her COOK.
Once the loaf is done, remove it from the maker and let it cool before slicing.
Or don't.
Do what I do and wait approximately eight minutes before picking at the top because patience is a virtue I do not posses.
The end result is soft, lightly sweet, cinnamon-y bread that is dangerously good toasted with some butter.
And most importantly:
No mushroom bread explosion.
No missing cinnamon zones.
Just bread.
Beautiful, gorgeous, peaceful bread.
Until I inevitably decide to modify the recipe again.
