personally i do ketchup but also, APPLE BUTTER! not sure if it's just a local thing, but around where i live if you order sweet potato fries you get a cup of apple butter, and it's SO freaking good!

Here in New Jersey, late night trios to the diner after last call at the club or bar means a fat order of disco fries: These are diner prepared french fries (better if just a WEE bit over done) covered in brown gravy with cheese on top. Piping hot, preferably!
Personally, I'm neither here nor there on the cheese, but the gravy is a must!

@Lori poutine did eventually make its way to better restaurants in the far flung regions of New Jersey. I like it quite a lot! But disco fries are uncomplicated. The "low rent" form of poutine. 😊
