Absolutely love MAISIE from Black Butler Season 5! Both the visuals and the song itself are fantastic
Also a big fan of Clannad's opening. Extremely cute song that fits the show very well.
It's the exacty opposite of an opening, it's an ending BUT I also wanna add WALTZ from Black Butler(Season 5 ending)
This ending makes me tear up every time I watch it, the fact that Yana had no hand in it is unreal because this entire ending understands Black Butler to its very core. Genuinely a masterpiece and a work that had an immense amount of love and admiration towards the series put into it

Typing this out made me realize I have too many favorites...
Opening 2 for Mob Psycho 100 is...interesting. My Mob Psycho OP of choice is the first one, I guess I have too much of an attachment to it (all of its OPs are good, though, of course)
...and on that note, I also really love Mob Psycho's first ED as well
(I also love all of Mob Psycho's EDs, especially all the ones in Season 2, but I'd spend all day writing if I put down all of those)
I really like Hunter X Hunter's first ED
I remember the Toonami edit of it started on the bit with all of them standing on the cliff and I thought it was the coolest thing ever
...and the same band did Parasyte's OP
Parasyte's OP is really cool, it spoils--er, foreshadows a lot of the story, and the lyrics fit perfectly with the themes the anime brings up
I have a lot of nostalgia for Bleach's 12th OP and Samurai Champloo's ED, because they both remind me of stumbling on Toonami at like 3 in the morning that one time. A core memory, that one.
Samurai Champloo's ending specifically has such a specific mood about it that I can't quite put into words.
Going back to your Rule of 2s, my favorite Code Geass opening is specifically the second version of the second opening, I love how it flashes back and forth between Lelouch and Suzaku and the two different factions at certain points, because this is part where the two start to oppose to each other
...and also Durarara's second opening, a much moodier song that fits for when the story starts to get more serious.
My entire reply could've been nothing but Monogatari's OPs and EDs, Monogatari is nonstop with god-tier openings and endings, choosing only one was hard, because I could talk about all of them. I think my absolute favorite is Nisemonogatari's ED
Monogatari also does the thing where it has multiple versions of each OP and ED that change slightly, that one is version 2 of that ED
...and then it's also physically impossible for me to listen to these last three without wanting to cry

@Black Market Stray Cat i had a real tough time deciding which mob psycho opening i loved more, decided to go with 2 because i like the song the most. there's not a single miss i can think of when it comes to mob psycho 100 which is why its one of my favorite shows.
that samurai champloo ed song fuckin bangs. still have yet to watch that. and the visuals for the nisemonogatari ed is crazy awesome!!!!! thank you for putting so many, it was a real treat to look thru these

mob psycho 100! thank you for reminding me of it, those openings are very very good....
but my favorite has to be the monster opening.......the haunting wistfulness contrasting the powerful guitar, it fits monster so well.....gives me chills everytime^^
