Ingredients:
- 225g wheat flour
- 40g neutral oil
- 90ml unsweetened oat milk
- 80g canned white beans, drained
- 30g white sugar
- 1 packet baker's yeast
- Pinch of salt
- 50~100g dark chocolate chips
Steps:
- Heat the oat milk very lightly in the microwave (it should be just barely warm), take it out, add 10g of the 30g of sugar and the packet of baker's yeast, mix once, then let the mixture puff up on the side for 10-15 min.
- Drain the white beans in a strainer then pour them into a mixing bowl, mash them with a fork so there are no more whole pieces left.
- After 15 min, pour the milk and yeast mixture over the mashed beans, mix then add the neutral oil, the remaining sugar and the sifted flour and the pinch of salt.
- Mix well for 10-15 min to get a smooth ball of dough that no longer sticks.
- Cover the dough with a tea towel or plastic film and let the dough rise in a warm place for 1h.
- The dough will have doubled in volume, add the chocolate chips, and knock back the dough. Divide it into 6 pieces, shape them into balls that you'll then flatten out, then roll them to form little logs.
- Place them in a suitable mold leaving space between each one, cover and let sit for 45 min in a warm place.
- Gently brush the brioches with oat milk then put them in the oven, already preheated to 180°C, for about 20 min.
- Once the brioches are nicely golden, take them out of the oven, let cool and enjoy~!
PS: if, like me, you REALLY love chocolate, feel free to open up the brioches and spread some more on! It's even better that way ^^
